Monocultivar Grignano San Cassiano is produced by olives hand harvest in mid-November worked within four hours in our mill.
It has visibly limpid golden yellow color. It smells of unripe pear, white apple and banana, with a hint of balsamic herbs. The taste is fine, characterized by flavors of tomato, lettuce and almond. It is bitter, pungent and harmonious.
