CHARACTERISTICS
Our wine cellar is the natural continuation of our philosophy of life… and of winegrowing. Like the cultivation and harvest, vinification is also done without great oenological intervention, by simply allowing the nature of the wine to take shape, to place its personality in the forefront. Always unique and different, according to the terroir and vintage.
DRYING
The practice of drying grapes is definitely typical of the Valpolicella and is unique in the world of red wines. The particular climate of San Cassiano facilitates this delicate phase, which permits the producer to increase the level of sugars and the organoleptic intensity, concentrating the nuances and tastes of the grapes in an absolutely natural manner.
AGING AND REFINING
Aging takes place in fine and extremely fine grain French durmast oak casks, with average toasting, without adding foreign scents of wood to the wine, but simply protecting it according to tradition, from humidity and excursions in the temperature. In the end, a final touch of roundness is given by refining the wine in the bottle.
